Bone-In Beef Tenderloin with Madagascar Peppercorn Sauce

Ingredients:
- 2 bone-in tenderloin steaks
- Your favourite steak seasoning
- 1 C thickened beef stock (substitute beef gravy)
- 1 Tbsp butter
- 2 Tbsp 35% cream
- 1 oz dry sherry
- 2 Tbsp green peppercorns
Directions:
Melt butter in a frying pan over medium heat.
Add green peppercorns and cook for about 2 minutes.
Add thickened beef stock, stir until bubbling.
Add sherry and 35% cream.
Continue stirring until sauce thickens, about 2 minutes.
Remove from heat and serve with steak.
Meanwhile, season steak lightly with steak seasoning.
Grill steak on medium high for 3 to 4 minutes a side
or to your personal preference.
