Smoked Prosciutto Wrapped Sea Scallops on Rosemary Skewers and Chorizo Sausage Stuffed Shrimp
Ingredients: 
  • Smoked Prosciutto Wrapped Sea Scallops
  • Large sea scallops
  • Smoked prosciutto
  • Rosemary sprigs
  • Chorizo Sausage Stuffed Shrimp
  • 1 lb Large shrimp, raw, shell off and de-veined, tail on. (12-15 per lb.)
  • 1 Chorizo sausage, cut in 3/4” rounds
  • Sage leaves
Directions: 

Smoked Prosciutto Wrapped Sea Scallops

Wrap sea scallops in smoked prosciutto.
Strip bottom leaves of rosemary from stem.
Skewer through scallops to secure prosciutto.
Grill 2-3 minutes per side.

Cocktail Sauce

1/2 C ketchup
1/3 C horseradish
Juice of 1/2 lemon
Dash of Tabasco

Mix ingredients to taste

Chorizo Sausage Stuffed Shrimp

1 lb Large shrimp, raw, shell off and de-veined, t
ail on. (12-15 per lb.)
1 Chorizo sausage, cut in 3/4” rounds
Sage leaves

Wrap sage leaf around sausage
and place inside large shrimp,
skewer like a lollypop.
Grill 2-3 minutes per side
