BBQ'd Lamb burgers with Tzatziki Sauce & Grilled Fennel Salad
YIELD 24 BURGERS Cost of burgers $3.15 each
10lb ground lamb
2 mid. size white onions chopped in food processor
1 cup bread crumbs
5 eggs
1kl. Kefalotyri cheese (Greek sheep’s milk cheese)
½ cup of water
Salt & Pepper
Beat eggs and add to lamb, onions, bread crumbs salt and pepper & water and knead until nice and smooth. Divide meat in 4oz balls and flatten out place 30-30 grams of sliced cheese and top with another 4oz of flatten meat closing the edges so the cheese is no longer visible. B.B.Q. for 5mins on each side
