Stilton, Brandy Cream Sauce
Ingredients:
3 oz Stilton Cheese
2 oz Brandy
2 cups 35% cream
Fresh ground sea salt and pepper
Method:
Crumble the Stilton cheese into a large stainless steel or non stick sauté pan.
Place pan over medium heat. Cook while stirring for about two minutes or until the cheese begins to melt.
Add brandy and continue to cook an additional minute allowing the alcohol to cook off.
Add cream and raise the heat to high.
Continue to cook until reduced to a smooth, coating consistency, stirring frequently to avoid breaking.
Season with sea salt and pepper to taste.
(For a slightly different taste sweat a little finely minced shallot in extra virgin olive oil before adding the cheese to the pan)
