Blackened Catfish

INGREDIENTS

CATFISH

  • 4-6 ounces of Fiery Spice (or Cajun spice blend)
  • 2 oz butter
  • Diced garlic
  • 5 oz catfish filet

SHRIMP NAWLINS

  • 2 oz medium salsa
  • 2 shakes of Tabasco Chipotle Pepper Sauce
  • 1/2 oz liquid smoke
  • 3 Tbsp Fiery Spice (or Cajun spice blend)
  • 5 large shrimp

MANGO CHIPOTLE SAUCE

  • 1 C mango chunks, pureed
  • 1 tsp ground Chipotle
  • 2 tsp vinegar
  • 1 tsp salt
  • 1 tsp sugar

PREPARATION

CATFISH

  1. Wash and clean catfish.
  2. On a plate, spread spice.
  3. Press both sides of catfish in spice.
  4. On a hot BBQ giddlepan, heat butter and garlic. (butter should sizzle)
  5. Gently place spiced catfish on BBQ Griddle. Cook for 3-4 minutes per side.

SHRIMP NAWLINS

  1. Peel and de-vein shrimp.
  2. On medium BBQ grill shrimp until done (2-3 minutes). Shrimp will turn pink.
  3. In a saucepan, add above ingredients.
  4. Heat and mix well. Toss with shrimp.

MANGO CHIPOTLE SAUCE

  1. Blend ingredients in food processor.

ASSEMBLY

  1. Serve mango chipotle sauce over grilled fish and shrimp.
