Breakfast Bread Pudding
- 1 loaf of day old French bread, cut into ¾” cubes
- 4 small or 2 large cooked sausages, cut into small ¼” rounds
- ¼ C sweet onion, chopped
- 4 eggs
- ¾ C milk
- 1TBSP fresh chopped thyme dried
- dash of kosher salt
- ¼ TSP fresh ground pepper
- ¼ C diced red pepper
Spray muffin pan with non-stick cooking spray.
In a large bowl combine cubes, onion, and sausage.
In another bowl whisk together eggs, milk, salt, pepper and thyme.
Pour egg mixture over bread, stir together and let soak into bread for 5 minutes to absorb.
Spoon into muffin tins and bake on the top rack of a 350 degrees BBQ for approximately 20 minutes, until the egg sets or sides and tops are golden brown.
