Seared Sesame Encrusted Tuna w/Mango Slaw

INGREDIENTS

MANGO SLAW

  • 1 firm Mango (shredded or fine julienne)
  • 1/4 C chopped cilantro
  • 2 oz Sambucca or Pernod
  • 1/2 Red Onion, julienned
  • 2 Green Onions, chopped
  • 1/2 Red Pepper, julienned

SEARED SESAME ENCRUSTED TUNA

  • 1-2 lbs. piece of Tuna i.e. Wild Yellow Fin
  • 1/8 C White Sesame Seed
  • 1/8 C Black Sesame Seed
  • Splash Sesame Seed Oil

PREPARATION

MANGO SLAW

  1. Mix slaw ingredients and allow to sit for at least 1 hour.

(Note: As a Sambucca substitute, you can make a simple syrup by simmering and reducing equal parts water and sugar with a star anise)

SEARED SESAME ENCRUSTED TUNA

  1. Cut Tuna in 1" steaks. Lightly coat in Sesame Seed Oil and roll to cover ends in mixture of sesame seeds.
  2. Grill on hot grill for 3 minutes per side. Vary the amount of cooking depending upon how rare you like your tuna.

ASSEMBLY

  1. Slice tuna and serve with mango slaw.
