Prosciutto Wrapped Sea Scallops On Skewers

Ingredients

  • Large sea scallops
  • Smoked prosciutto
  • Rosemary sprigs
  • 1/2 C ketchup
  • 1/3 C horseradish
  • Juice of 1/2 lemon
  • Dash of Tabasco
  • 1 lb Large shrimp, raw, shell off and de-veined, tail on. (12-15 per lb.)
  • 1 Chorizo sausage, cut in 3/4” rounds
  • Sage leaves

Preparation

  1. Wrap sea scallops in smoked prosciutto.

  2. Strip bottom leaves of rosemary from stem.

  3. Skewer through scallops to secure prosciutto.

  4. Grill 2-3 minutes per side.

  1. Mix ingredients to taste.

  1. Wrap sage leaf around sausage and place inside large shrimp, skewer like a lollypop.

  2. Grill 2-3 minutes per side.
