Bone-In Beef Tenderloin  with Peppercorn Sauce

INGREDIENTS

BONE-IN BEEF TENDERLOIN

  • 2 bone-in tenderloin steaks
  • Your favourite steak seasoning

MADAGASCAR PEPPERCORN SAUCE

  • 1 C thickened beef stock (substitute beef gravy)
  • 1 Tbsp butter
  • 2 Tbsp 35% cream
  • 1 oz dry sherry
  • 2 Tbsp green peppercorns

PREPARATION

BONE-IN BEEF TENDERLOIN

  1. Season steak lightly with steak seasoning.
  2. Grill on medium high for 3 to 4 minutes a side or to your personal preference.

MADAGASCAR PEPPERCORN SAUCE

  1. Melt butter in a frying pan over medium heat.
  2. Add green peppercorns and cook for about 2 minutes.
  3. Add thickened beef stock, stir until bubbling.
  4. Add sherry and 35% cream.
  5. Continue stirring until sauce thickens, about 2 minutes.
  6. Remove from heat and serve with steak.
